Mmmm...food

In an attempt to completly sabotage my Health Care Infrastructure course this weekend, I put off my very important presentation on the VA Health Care system to take a side trip down the cooking trail. By the end of the weekend, I'd wound my way through the current issue of Everyday Food and managed to make a big pot of roasted red pepper soup, four delicious salmon fillets in an orange juice and dijon mustard sauce, roasted parsnips and sweet potatoes, and eight rice and bean burritos that promptly got frozen for later use.

At least if I flunk out of school, I won't starve.

I appear to be a sponsor for that web page. Hope I am getting a lot of money for it. Some of those dishes sound wonderful, others just so so. How was the soup? Parsnips?

Salmon!

Would you and Jeff adopt me please?

So the low-down is that the roasted garlic soup is ok. Definitely looks and sounds impressive but for the most bang-for-your-buck, I'd go with my roasted garlic soup recipe which I can forward. Much more robust and flavorful.

I was leery of the parsnips myself but the recipe sounded good and they were cheap. Parsnips are like Carrot-Lite. They have the inital taste of carrots but sweeter. The sauce for them was dijon mustard and maple syrup. I was surprised I didn't puke when I first mixed it but it was good like Broccoli Salad dressing good. I would totally serve the roasted sweet potatoes and parsnips as a side dish for Thanksgiving.

I've been so reluctant and scared to try cooking salmon. Of all the things I thought I would poison myself with, it was salmon. This recipe was SUPER easy, fast, and really good. I'm eating it right now, in fact, as I had tons of left-overs (Jeff doesn't eat my cooking).

My thing with Everyday Food was not to be afraid that I'd try and fail. I'm glad I took that leap of faith.

Jeff doesn't eat your cooking? There will be words said. And what, pray tell, does he cook then? Stove Top? Campbell's?
